There’s nothing like a cool glass of lemonade on a warm spring or summer’s day. And the good news is that it’s really easy to make your own. 

Whether you’re thinking about having a picnic, a BBQ, or just having some quiet relaxation in your garden, this lemonade recipe is the perfect thirst quencher.

Serves: 6

Ingredients

  • 6-8 unwaxed lemons
  • 1 litre of sparkling or soda water (you can use still water instead if you’d rather)
  • 1 cup still water
  • 120-150g honey or white granulated sugar (add more or less depending on how sweet you like your lemonade)
  • Ice cubes
  • Fresh mint and/or lemon wedges to garnish

Method

  1. Grate the zest of six lemons, then cut them into wedges and juice them into a cup. You need to fill the cup, so use more lemons if needed.

  2. Add the zest to a medium saucepan on low to medium heat with the sugar or honey and a cup of still water. Keep stirring as you bring the mixture to the boil. When the syrup is boiling, add the lemon juice and remove from the heat immediately.

  3. Wait until the syrup is completely cool, then strain it into a jug.

  4. When ready to serve, mix the syrup with sparkling water and serve over ice.

  5. Add a lemon wedge, and/or a sprig of fresh mint to garnish.

  6.  Sit back, relax and enjoy!
