Choco Leibniz Easy Biscuit Pudding

I saw this recipe on Twitter, giving a preparation time of just 10 minutes. As I was going to dinner with some friends and had promised to provide the pudding but only had half an hour to change, do my make up and cook the pudding, this recipe definitely fitted my requirements.

Bahlsen Choco Leibniz biscuits are my absolute favourite and I have been known to eat a packet in one sitting. This is an all important fact as it is likely that I will have all the ingredients required in my store cupboard.

Choco Leibniz Easy Biscuit Pudding

Ingredients: for 4-6
4 eggs, whisked
300ml double cream
6tbsp caster sugar
Pinch ground ginger
12 Choco Leibniz (Milk or Dark) biscuits, roughly crushed (I used 6 dark and 6 milk with caramel)
Icing sugar, to dust

Method:
Preheat the oven to 200°C/400°F/Gas Mark 6.
In a bowl, mix the eggs with the double cream, sugar, ginger and the CHOCO LEIBNIZ biscuits.
Place this mixture into a small baking dish.
Place in the oven for eight to 10 minutes. Serve warm and dust with icing sugar.

I was amazed at how light and fluffy it was. Everyone loved it served with ice cream. You could substitute the ginger with orange zest and use the Orange & Chocolate Leibniz biscuits.
