Smoked salmon with orzo pasta

This smoked salmon with orzo pasta recipe puts an Italian spin on one of the UK’s favourite dishes: fish pie. Cheesy, moreish, and very simple to make, this is a heartwarming and satisfying meal for a chilly winter’s evening.
Ingredients
340g smoked salmon fillets
300g orzo pasta
White onion
Large leek
1ltr of fish or chicken stock
200g Taleggio cheese
5 tbsp double cream
3 tbsp Parmesan cheese
3 tbsp dried breadcrumbs
Olive oil
Fresh parsley
Directions
Preheat your oven to 220°C. Heat a splash of oil in a large saucepan. Slice the leek and finely chop the onion before adding to the saucepan.
Add the orzo to the saucepan and make sure it's fully coated in olive oil before adding the stock and bringing it to a boil. You can add some salt and pepper here if you wish. Leave to simmer for nine minutes.
Cut the smoked salmon fillets into small cubes and dice the Taleggio cheese. When your orzo mixture is finished simmering, remove it from the heat and stir in the salmon, Taleggio, and cream.
Pour your mixture into an oven-proof dish and top it with the Parmesan and dried breadcrumbs. Place in the oven for 20 minutes, or until the top turns golden brown. Garnish with roughly chopped parsley and enjoy!
