Salmon bubble & squeak

A quick, comforting meal that’s easy to prepare. Especially if you have some leftover mashed potato!

SALMON BUBBLE & SQUEAK

Ingredients serves 2

Mashed potato

Brussel sprouts, outer layers removed

Butter

2 salmon fillets

Olive oil

Lemon

Parsley

Pack Hollandaise sauce (currently £2 for two at Tesco – and they freeze well too, so a real bargain – plus only 110 cals per person)

To prepare/serve

Steam the brussels for about five minutes until tender, then mix into the cold mashed potato. Heat in the microwave until piping hot (about two minutes).

Heat a drizzle of olive oil in a small frying pan and cook the salmon for around two minutes each side. Meanwhile put the Hollandaise into a small saucepan and warm through.

Divide the bubble & squeak potato mixture between two warmed plates, top with the salmon and then pour over the heated Hollandaise. Decorate with chopped parsley and serve with lemon wedges.

You could add some chopped grilled bacon or pancetta to the potato as well if you had some handy.
