Californian Open Sandwich

This Californian open sandwich is such a quick and easy, healthy lunch or supper snack.

Californian Open Sandwich

Ingredients serves 2
2 slices of sourdough bread
2 eggs
1 avocado
12 cherry vine tomatoes
2 large open mushrooms
Hummus
Sweet chilli sauce

How to prepare
Grill the mushrooms and tomatoes with a little olive oil and salt & pepper. Meanwhile poach the eggs (see video for clever trick). Toast the bread and then spread with hummus. Slice the avocado and place half on each plate. Lay the grilled mushroom on one half of the toast and the poached egg on the other half, with the grilled tomatoes scattered around. Drizzle some sweet chilli sauce over the top.

Serve and enjoy as it is absolutely delicious!
