Spaghetti with Courgettes, Chilli, Garlic and Lemon

minutesWas Googling around looking for courgette recipes and made this Spaghetti with Courgettes, Chilli, Garlic and Lemon last night. It’s ridiculously easy, ridiculously quick and… rather surprisingly, ridiculously delicious.
Ingredients
400g spaghetti (or penne)
2 large courgettes, chopped
1 red chilli, finely minced
2 – 3 cloves garlic, finely minced
Zest of 1 large unwaxed lemon
65g unsalted butter
Parmesan
Directions
- Put your pasta on to boil and cook according to pack instructions and drain.
- Heat a good glug of olive oil in a frying pan and saute the chopped courgettes for 5 mins on a medium heat, then on a high heat for another 3 – 4 minutes.
- Add the garlic, chilli and lemon zest and cook for 1 – 2 mins until fragrant. Add the butter and heat until melted. Season and then toss in the drained pasta.
- Mix the pasta through the sauce and, if liked, mix through a generous amount of grated Parmesan.
