Was Googling around looking for courgette recipes and made this Spaghetti with Courgettes, Chilli, Garlic and Lemon last night. It’s ridiculously easy, ridiculously quick and… rather surprisingly, ridiculously delicious.

Ingredients

  • 400g spaghetti (or penne)

  • 2 large courgettes, chopped

  • 1 red chilli, finely minced

  • 2 – 3 cloves garlic, finely minced

  • Zest of 1 large unwaxed lemon

  • 65g unsalted butter

  • Parmesan

Directions

  • Put your pasta on to boil and cook according to pack instructions and drain.
  • Heat a good glug of olive oil in a frying pan and saute the chopped courgettes for 5 mins on a medium heat, then on a high heat for another 3 – 4 minutes.
  • Add the garlic, chilli and lemon zest and cook for 1 – 2 mins until fragrant. Add the butter and heat until melted. Season and then toss in the drained pasta.
  • Mix the pasta through the sauce and, if liked, mix through a generous amount of grated Parmesan.
