Recently my semi-retired OH has been spending weekdays at home and has not been very impressed at my cursory lunch time glance at the fridge and then quick snack possibly eaten whilst reading the newspaper. So I was intrigued with this recent recipe I found in a Sunday magazine for a meal in a mug that even he, with his less than able kitchen skills, could manage!
Ingredients:
Half a clove of garlic, finely chopped
5 x 30g discs of frozen spinach
15ml double cream or creamy full-fat yoghurt
1 egg
snipped chives for garnish
Put the garlic and then the frozen spinach discs in the mug and microwave for 3 minutes at medium power. Stir well, season with salt and pepper, and return to the oven. Keep cooking at full power until the spinach is fairly dry – around 2 – 3 minutes. Add the cream/yoghurt and season with s & p again. Microwave at full power for a minute at a time until the mixture is thick and bubbling. Now break the egg on top of the spinach mix and quickly pierce the yolk with a small sharp knife. Microwave at full power for 1 minute. If it is not quite done cook for another 20 – 30 seconds. Remember the egg will continue to cook even when it comes out of the oven so do not overcook. Scatter with chives and dig in.
