Hemel Hempstead (Hybrid 50% in Office)

We are looking for a talented Food Technologist to join our growing team! Underpinning our exceptional holiday resorts across Great Britain is our food and beverage offering. Guests love our food and drink and we want to ensure that it exceeds expectations and helps to create wonderful experiences with memories which last a lifetime. The Food Technologist is accountable for the day to day management of food and drink safety, legality and quality including management of product specifications & allergen of ingredients, recipes and menu technical approvals and complaints management across food and drink across all of our 38 wonderful holiday parks.

Key Responsibilities

Maintain up to date product specifications and systems, liaising with suppliers to capture all required information and to review and approve specifications.

Ensuring required Due Diligence documents are in place. Ensuring labelling is legal and factually correct

Ability to implement standards competently and challenge the unacceptable in the right way

Use product specification and recipe management systems to support brands with recipes and menus approvals

Supporting brand development and buying teams to deliver compliance to food safety, legality and quality standards

Generate all product specification supporting documentation including quality attribute sheets and retail labels.

Investigation of compliance issues to identify root cause and implement clear action plans

Escalating and gathering data to support Incident management and product complaints

Supporting Technical manager and buying teams to monitor supplier and product performance, communicating trends to the team

Maintain up to date files of policies and procedures.

Provide reports as required to key stakeholders including procurement and food development.

Establish and develop relationships with internal stakeholders including procurement, food development, marketing, health and safety, operations and training.

Keeping abreast of, and assessing the impact of, any new or changing legislation, implementation and embedding across business

Conduct the supplier audit risk assessment and manage our 3rd party auditors to complete all supplier audits to schedule and provide necessary follow ups.Set audit strategy, agree audit standard, appoint/ selection of auditor, execution of H/M/L risk assessment by auditor.

To manage supplier led product quality incidents and cascade appropriately across the Bourne Leisure business

Challenge for continuous improvement of supplier performance. Developing action plans with suppliers to step change food safety & quality performance where required. Use and apply experience and knowledge to mitigate supplier risks and influence and agree positive resolutions

Supplier visits and thorough knowledge of supplier base and technical capabilities/ limitations. Use knowledge of suppliers to support Procurement with suggestions of alternative supplier options.

Key Relationships

Support to internal stakeholders with safe & secure and compliance to food safety, legality and quality

Establish and develop relationships with internal stakeholders including procurement, food development, marketing, health and safety, operations and training

Qualifications and Experience

Minimum HNC (or equivalent) in Food or Bio Science related discipline.

Good current knowledge of food law and labelling legislation

Understanding of technical and manufacturing experience including HACCP and BRC, quality control/assurance

Approval of due diligence documents Experience of reviewing and authorising specifications, menu copy and/ or retail pack copy.

Relevant experience in a technical role in manufacturing, retail or foodservice

Essential Skills

Good judgement, drive and influence and a personal development plan to enhance this.

Excellent verbal and written communication skills.

Good level of numeracy and attention to detail.

Ability to work alone or as part of a team.

Ability to work to tight deadlines and under pressure.

Personable and able to liaise with colleagues and suppliers' technical teams.

Proficient with Microsoft Office applications Word, Excel, PowerPoint, Outlook etc.

Proficient with web-based product specification and supplier management database systems.

Self-motivated and solutions orientated with excellent communication skills

Desirable Skills:

Hold a valid drivers' license and maintain a valid and current passport with the ability to travel domestically and internationally depending on business needs.

Experience of Fourth Recipe and Menu Engineering system (Starchef).

Involvement in hosting 3rd party or customer audits

Experience in internal or supplier audits
