Coming in under 650 calories, this cajun crumbed sea bass and paprika potato recipe is a scrumptious, satisfying, and healthy alternative to our favourite national dish.. Served with tasty paprika potatoes, garlic broccoli, and mayo, this recipe will make for a quick and easy addition to your weekly menu.
Preparation time: 40 minutes
Cooking time: 25 minutes
Serves: 2
Ingredients
- 450g potatoes
- 2 sea bass fillets
- 25g Panko breadcrumbs
- 40g grated hard Italian style cheese
- 2 garlic cloves
- 200g broccoli florets
- 2 tbsp mayonnaise
- 1 tbsp smoked paprika
- 1 tbsp Cajun spice mix
- 1 tbsp olive oil
- 1 tbsp water
Method
1. Preheat your own to 220℃/200℃ fan/gas mark 7. Chop the potatoes into 2cm chunks (no need to peel). Pop onto a large baking tray. Drizzle with olive oil, season with salt and pepper, and then sprinkle half the smoked paprika on top. Toss to coat, then spread out into a single layer.
TIP: Use two baking trays if necessary. When the oven’s hot, roast on the middle shelf until golden (25-35 mins). Turn halfway through.
2. In a small bowl, mix together the panko breadcrumbs, Cajun spice mix (add less if you don’t like heat), grated hard Italian-style cheese, and olive oil for the crumb (see ingredients for correct amount).
Season with salt and pepper, then set aside.
3. Lay the sea bass fillets onto a lined baking tray, skin-side down. Drizzle with oil and season with salt and pepper. Divide the breadcrumb mix between the fillets and press down firmly.
Bake on the top shelf of the oven until the crumb is golden and the fish is cooked through (10-15 mins).
IMPORTANT: Wash your hands and equipment after handling raw fish. The fish is cooked when it’s opaque in the middle.
4. While everything bakes, mix the mayonnaise, remaining smoked paprika, and water for the mayo (see ingredients for the correct amount) in another small bowl. Season with salt and pepper, then set your paprika mayo aside.
5. Halve any large broccoli florets. Peel and grate the garlic (or use a garlic press). Heat a drizzle of oil in a large frying pan on high heat. Once hot, add the broccoli and stir-fry for 2-3 minutes. Stir in the garlic, then reduce the heat to medium and cook for 1 minute.
Add a splash of water and immediately cover with a lid or some foil. Allow to cook until the broccoli is tender (4-5 minutes).
6. When everything’s ready, serve the sea bass with the paprika potatoes and garlic broccoli on the side.
Drizzle over some paprika mayo and serve the rest alongside for dipping. Enjoy!
