These alcohol ice lollies are perfect for hot days. When I last served them everyone was so happy as they were refreshing and fun. I am sure you could invent your own but here are three recipes to get you started. Just a word of advice – warn your guests that these are alcohol ice lollies in case they are driving.
Pimms Ice Lollies
Ingredients makes 6
300ml/½ pint Pimms, or similar ‘fruit cup’
850ml/1½ pints lemonade
handful fresh strawberries, hulled, halved
few sprigs fresh mint, leaves only
1 orange, zest only
How to prepare
Mix the Pimms and lemonade together in a large jug.
Place a couple of strawberry halves, a few mint leaves and a little orange zest into each lolly mould.
Pour the Pimm mixture into each ice lolly mould until three-quarters full. Insert the lolly stick and lid and freeze for 2-3 hours, or until frozen solid.
Alternatively, you can use large shot glasses as moulds: place the strawberry, mint and orange zest into the glass and fill with the Pimms mixture. Freeze for one hour, or until the lollies are partially frozen, then insert the lolly sticks and continue to freeze until completely frozen.
To remove the lollies, dip the moulds briefly in hot water and carefully remove the lollies.
Gin and Tonic Ice Lollies
Ingredients makes 6
6 slices of cucumber
6 mint leaves
75ml gin
250ml tonic
50g caster sugar
How to prepare
Take a six-hole lolly mould and push a cucumber slice and a mint leaf into each one. In a jug, stir the gin, tonic and sugar until the sugar dissolves and the tonic loses its fizz. Divide between the moulds, push in the lolly sticks and freeze for at least 4 hrs, or preferably overnight.
Raspberry Prosecco Ice Lollies
Ingredients
450g raspberries
50g caster sugar
177 ml Prosecco
How to prepare
Whizz all the ingredients up in a food processor and divide between the moulds. Freeze for at least 4 hrs, or preferably overnight.
