Found this dessert recipe on BBC GoodFood website and I’m really pleased that I gave it a whirl. Easy to prepare (five mins plus freezing), these Avocado & Strawberry Pots make for a very creamy dessert that doesn’t use cream (or taste of avocado!)
Ingredients serves 4 (94 cals per pot)
- 200g ripe strawberries, hulled and chopped
- 1 avocado, stoned peeled and roughly chopped
- 2tsp balsamic vinegar (I didn’t have any so used balsamic glaze)
- 1/2tsp vanilla extract
- 1 – 2 tsp maple syrup
How to prepare
Put the strawberries (save four pieces for the top**), avocado, vinegar and vanilla in a bowl and blitz with hand blender (or use food processor) until as smooth as you can get it. Only add the maple syrup if the strawbs aren’t sweet enough.
Pour into containers, add a strawberry to each**, cover with cling film and freeze. Allow the pots to soften for 5 – 10 mins before eating.
**Personally I wouldn’t bother with the strawberry on the top as the BBC Good Food recipe recommends. It doesn’t taste that good once it’s been frozen in my humble opinion.
