Chocolate chip and macadamia cookies

Snowed in and feeling like some comfort food? I made a batch of these chocolate chip and macadamia cookies and welcomed the neighbours in for a hot drink as none of us could get out in our cars.

Chocolate chip and macadamia cookies

Ingredients: for 16 – 20 cookies
55g light soft brown sugar
115g caster sugar
85g butter, softened
½ tsp vanilla extract
1 free-range egg, beaten
175g self-raising plain flour
55g small white chocolate chunks or chips
55g plain chocolate chunks or chips
60g macadamia nuts, coarsely chopped

How to prepare:
Line a baking sheet. Heat oven to 180℃, gas 5 or on grid shelf on floor of baking oven in AGA. Cream the sugars and butter together. Gradually beat in the vanilla and egg until light and fluffy. Fold in the flour, stir in the chocolate and nuts.

Take tablespoons of the dough and shape into rough circles, then put on the baking tray, about 5-6cm apart. Bake for 10-15 minutes or until lightly browned. After a few minutes, put onto a wire rack then eat within 30 minutes. Delicious served with hot chocolate!
