- Gin & cranberry relish recipe

If you’ve tried our cranberry gin recipe, then you’ll have a load of boozy cranberries that you might not know what to do with. But fear not, this relish recipe is the perfect way to turn them into a tangy treat.
Cooking time: Up to 45 minutes
Makes: Approximately 2 jars of relish
Ingredients
- 120ml fresh orange juice
- 180ml cranberry gin
- 125g sugar – castor, demerara or light brown. A darker sugar will give you a darker richer relish.
- 250g of cranberries that have been steeped in gin for 4 weeks. This cranberry gin recipe will show you how to do this.
- Zest of one orange
- 1 x cinnamon stick
- Pinch salt
To store:
- 2 sterilised jars
Method
1. In a medium saucepan over high heat, bring the orange juice, gin and sugar to a boil, or heat until the sugar has dissolved.
2. Add the steeped cranberries, orange zest, cinnamon and salt, and return to the boil.
3. Reduce the heat to medium and simmer gently for 10 to 12 minutes, until most of the cranberries have burst open and the mixture has thickened/become jam-like.
4. Allow the mixture to cook, and then spoon into sterilised jars, and keep chilled in the fridge. The relish will usually keep well in the fridge for up to 3 months.
