Summer Salad Recipe: Peach, Feta and Mint with Pul Biber

What better way to enjoy this heatwave than to sit outside with a glass of chilled Rosé and enjoy this fresh, fruity summer salad of Peach, Feta and Mint with Pul Biber. It looks good and it tastes delicious. This recipe comes from Sabrina Ghayour’s cookbook Feasts.

Peach, Feta and Mint with Pul Biber Summer Salad

Ingredients: serves 4-6

4 large peaches, pitted and each cut into approximately 10 wedges
1 red onion, thinly sliced
Extra-virgin olive oil
1 tbsp pul biber chilli flakes (a Turkish spice, sweet and mild, available from Amazon)
Juice of ½ lemon
200g feta cheese, crumbled
1 small bunch (about 30g) of mint leaves, sliced into ribbons
Toasted pitta bread, to serve

How to prepare:

Put the peach slices, onion, a good drizzle of olive oil, pul biber and lemon juice into a bowl, season with salt and pepper and mix well. Transfer to a serving dish, then scatter over the feta and mint and serve with toasted pitta.
