She literally chopped up a butternut squash and roasted it (seeds included) in oil and paprika in a hot oven until it was tender and starting to caramelise around the edges. The she added in some chopped beetroot for the last 20 minutes. Fried off some kale in oil and a pinch of salt.
Finally, she added lots of tomatoes and some goats cheese and drizzled with balsamic.
