Harissa Honey
In a small bowl, blend 100g good mayonnaise, 1 tbsp harissa paste, 1 tbsp runny honey and 1 tbsp lemon juice. Cover and refrigerate. Bring to room temperature before serving. Great with prawns.
Caesar
Using a food processor, whizz together 3 tbsp grated Parmesan, 3 chopped anchovy fillets, a small garlic clove, 1 tsp Dijon mustard, a drizzle of Worcester sauce and 1tsp fresh lemon juice. Add one large egg yolk and blend. Gradually pour in 2 tbsp olive oil and 1tbsp hot water until emulsified and smooth. Stir through 1 tbspn capers and season.
Bloody Mary
In a bowl whisk 3 tbsp extra virgin olive oil, half tbsp red wine vinegar, 1 tbsp vodka, 1 tsp tomato ketchup, 2 tsp Worcestershire sauce, 1 tbsp fresh lemon juice, sprinkling celery salt and a dash of Tabasco. Then mix in 1 tbsp finely chopped parsley and 100g chopped tomatoes. Season. Great with grilled meat and vegetables alike.
Blue Cheese
OMG I absolutely love this with a medium rare homemade burger! Also good as a salad dressing of course. Crumble 25g Gorgonzola or Roquefort into a bowl and mix in 4 tbsp sour cream, 2 tbsp milk, 1 tbsp mayo, 1tsp Dijon mustard, 1 tbsp lemon juice and 2 tbsp olive oil until smooth and creamy. Then season and sprinkle on more crumbled blue cheese.
Citrus spice
Gently heat 4 tbsp olive oil in a frying pan and toast 1 tsp each coriander and cumin seeds for 5 mins, until fragrant. Remove from heat and whisk in 4 tbspn fresh orange juice, 1 tbsp sherry vinegar and 1 tbsp runny honey. Cool then season. Really delicious with fish.
