Spicy prawn cocktail with avocado
Spicy Prawn Cocktail with Avocado is a modern twist to a very classic prawn cocktail. Whether you choose to have it as an elegant appetiser or simple and quick lunch, this tasty prawn dish is always a winner. Eating healthy can be hard when balancing everything in your life, so this recipe is designed for busy people with little time to cook. It’s healthy, low calorie, creamy and delicious!

TOTAL TIME: 15 minutes
● 150g king prawns cooked and peeled and chilled
● 1/2 red onion finely chopped
● 1/2 red chilli finely chopped
● a handful of freshly chopped coriander
● 150g of fresh cucumber chopped
● 1 tbsp of tomato concentrate
● 1 large ripe avocado
● 1 tbsp of lemon juice
● 2 tbsp of Greek yogurt
● salt and freshly ground black pepper
Squeeze the lemon juice over the chilled and cooked prawns.
To make the sauce, mix all chopped onion with chilli, cucumber and the coriander together in a bowl and season with salt and pepper. Stir in the peeled prawns, add the tomato concentrate and mix it all well.
Prepare avocado: ripped avocado, Greek yogurt and toss in the lemon juice, blend all well together, season with salt if needed.
Divide the avocado mousse between 2 glasses and spoon the prawn mixture over the top.
