Cod with bacon, lettuce & peas

As with most CountryWives’ recipes, this one is fast to prepare, healthy, uses fresh ingredients and, of course, is absolutely delish.

COD WITH BACON, LETTUCE & PEAS 

INGREDIENTS serves 2

2 tsp olive oil

Banana shallot, finely sliced

4 rashers streaky bacon, cut into pieces

Garlic clove

2 cod fillets

200ml white wine

2 Little Gem lettuces, thickly shredded

3 tbsp Greek yogurt (zero fat)

 

METHOD

Gently fry the shallot, garlic and bacon in the olive oil for a couple of minutes.

Add the cod and cook for two minutes. Then turn the fish over and add the wine and the peas.

Cook for a couple of minutes more, then add the lettuce and the Greek yogurt and stir until warmed through.

 

You could replace the bacon with thinly sliced chorizo: in which case it should be the first thing in the pan, would need to cook for longer and you could do without the olive oil after that as you would have the wonderful spicy orange oil from the chorizo.
