Easy poached chicken breasts

You probably all already know this, but have just discovered a really simple way to cook chicken breasts. Simply put chicken breasts in a saucepan, cover with water, crumble in stock cube (or, if you’ve been reading this blog regularly, Telma Chicken Stock Mix oi vey) bring to boil, leave the lid on and stand for 15 minutes. Hey presto, not only do you have very low fat, super healthy, meltingly tender chicken breasts, you have some fabulous stock too.
