FLASH FRIED SALMON BAGEL

Was watching a very interesting BBC programme called The Truth About Healthy Eating presented by Fiona Phillips which changed my mind about some so-called superfoods. She also did an experiment where it was proved that a fried egg can be healthier than one that is scrambled. So I thought I would have this five minute recipe for my (now, guilt-free) lunch!

FLASH FRIED SALMON BAGEL

Ingredients serves 1
Half of split bagel
1 tsp creamed horseradish
1 tbsp mayo
Large slice smoked salmon
1 organic free range egg (don’t you just love those deep orange yolks)
Thinly sliced garlic clove

How to prepare
Toast half of bagel. Stir creamed horseradish into mayo. Cook slice of smoked salmon in non stick frying pan for a few seconds on each side until turns opaque.

Spread one side of bagel with mayo and top with salmon. Splash of oil in pan and fry the egg. When almost done, add garlic clove and sizzle briefly. Put egg on top of salmon, season and scatter over garlic.
