Salmon Pâté
Ingredients: (serves 1)
55g smoked salmon
lemon juice – to taste
5 ml olive oil
½ garlic clove, grated
20g cottage cheese
small handful of chopped fresh dill (or other herbs that you prefer)
vegetable batons to serve
How to prepare
Whack all the ingredients into a blender apart from the dill. (I used my Nutribullet). Blend until a smooth consistency is formed and then stir through the fresh herbs.
Serve with finger-length pieces of celery, carrot or cucumber.
Avocado Ranch Dip
Ingredients: (serves 1)
40g avocado
80g 0% Greek yoghurt
½ lemon, juice and zest
½ garlic clove, grated
small handful fresh cives/dill/parsley (whichever you want)
small chilli, finely chopped
vegetable batons to serve
How to prepare:
Peel, deseed and roughly chop the avocado. Throw the avocado into a blender with all the other ingredients except for the herbs. Blitz everything until you have a nice smooth paste then fold through your chopped herbs.
Serve with vegetable batons.
