Ingredients for 4:
2 small cucumbers
500g strawberries
few mint leaves
For dressing:
5 tbspns olive oil
zest and juice of half a lemon
1 good pinch of golden caster sugar
small red chilli deseeded and finely chopped
2 heaped tbspns fresh mint leaves finely chopped
Peel cucumbers, cut in half lengthways, scrape out seeds with a teaspoon and cut into 1cm slices. Slice each strawberry into small pieces. Put dressing ingredients into a small mixing bowl and whisk. Taste and season with s & p.
Place strawberry and cucumber into salad bowl, pour over the dressing, stir to combine, throw over a few mint leaves and serve immediately.
