Easy Soda Bread

This is honestly such an easy bread, no proving and no kneading – what could be simpler! Also it will impress your friends and family!

Easy Soda Bread

Ingredients

300g wholemeal flour

50g fine oatmeal

20g unsalted butter, plus extra for greasing the pan

1 tsp bicarbonate of soda

half tsp sea salt

1 tsp white caster sugar

200g buttermilk

200g whole milk

30g oat bran

How to prepare

Grease a 20cm tin with a little butter and dust with a little of the wholemeal flour. Preheat the oven to 210°C.

Combine the flour, oatmeal and butter in a bowl and rub together until it resembles breadcrumbs. Add the bicarb, salt and sugar and mix together. Make a well in the flour and add the buttermilk and whole milk and mix gently but as little as possible until well combined. Place in the tin and sprinkle with the oat bran on top. Cover in tin foil and place in the oven and bake for 25 mins with the foil on, then remove the foil and bake for 25 mins more.

Remove from the oven and cool for a couple of minutes befroe removing from the tin; place on a cooling rack.

Serve with a little sour cream butter, smoked salmon and some dill sprinkled on top!
